وقد تطور إنتاج وإستهلاك عيش الغراب فى مصر بدرجة كبيرة خلال السنوات الأخيرة وإن كان من الصعب تقدير إجمالى إنتاج عيش الغراب العادى والمحارى فى مصر بدقة وذلك لعدم إنتظام الإنتاج وبعثرة المزارع الصغيرة التى لاتخضع إلى إشراف الجهات الرسمية، وإن كان التقدير الأولى للإنتاج خلال عام 1992 هو حوالى 60 طن عيش غراب محارى وحوالى 80 طن عيش غراب عادى وبذلك يمكن حساب متوسط الإستهلاك السنوى للفرد من عيش الغراب فى مصر حيث يمكن أن يكون حوالى 2.5 جرام، وهذه النسبة ضئيلة للغاية إذا ما قورنت باستهلاك الفرد فى ألمانيا مثلا والتى تبلغ حوالى 2.5 كيلو جرام سنوياً، أى ألف مرة أكثر من إستهلاك الفرد فى مصر، وهذا يوضح بجلاء أن استهلاك عيش الغراب فى مصر يعتبر إستهلاكاً هامشياً للأفراد ومازال يحتاج إلى مجهود من وسائل الإعلام والجهات العلمية لتطوير نمط الإستهلاك الغذائى فى مصر .

وقد تزايد الطلب على منتج المشروم فى الأسواق بعد أن أطلق عليه البعض مصطلح "لحم الفقراء"؛ نظراً لإنخفاض أسعاره واحتوائه على نفس المكونات البروتينية للحوم .

ويمكن تحويل المشروم لغذاء شعبى فى مصر بمزيد من التوعية بمميزاته العديد وفوائده الغذائية المتنوعة، بما يؤمن لمنتجيه سوقا كبيرة
